Stop buying store bought salad dressings and try this recipe!
We can easily buy things to help us eat better, but dressings are a bit harder. I believe it’s just as easy to make one at home than read every single label to find a healthy one.
The dressing I like making has just a few ingredients, I mean the hardest thing to get together is the garlic. I often just mince garlic no matter how it’s called.
It’s called Creamy Garlic Dressing - makes about 10 servings at about 2 TBSP each
½ cup EVOO
¼ cup apple cider vinegar
3 cloves garlic, crushed
3 Tbsp fresh lemon juice
2 Tbsp chopped fresh parsley (I used dried)
1 Tsp Himalayan salt
½ Tsp Dijon Mustard
1 Tbsp. raw honey (or pure maple syrup to make it vegan)
Place all in food process and blend until smooth. (I just put it in a jar with a lid and shake) Refrigerate what you don’t use - bring it out about 30 minutes before you want to use it as the EVOO will solidify.
So easy! You can get one of these cute little containers to keep it in.
So what about a salad.
I have been told by people they find it hard to make a salad at home. I am like why?
It’s about the easiest healthiest meal you can make!
What I usually start with is a leafy green. Is that spinach, arugula, a mix of others… the greener the better. This week I have also brought in some microgreens and alfalfa sprouts.
I will do a cup of my leafy greens.
Then another cup of other veggies. This week I have shredded carrots (easily purchased and not done myself), Cherry tomatoes, cucumbers, bell peppers.
I also have some Jicama this week. It is a good source of fiber and has a lot of other essential nutrients.
I also add a scoop of Hemp hearts.
But you can add seeds like pumpkin seeds or nuts like walnuts.
You can make the salad whatever you want.
Of course you can add in a protein too - my choice is usually beans like chickpeas or tofu. This week I am using chickpeas.
I top it with my dressing and then I toss it.
I find the tossing part makes the salad so delicious as every bite has that dressing on it!
