You guys made me do it!



I have wanted to make this recipe for a long time!

I mean with a name like “goddess bowl” it must be good.

I have been enjoying sharing these recipes with you and trying a new one every week!


The name "Protein Power Goddess Bowl"


The Lemon-Tahini Goddess dressing was amazing! It had a bit of a punch with that first bite, but I couldn’t eat it fast enough.


The Lentil mixture had so many yummy veggies and it was the first time I had cooked wheat berries so that was fun. They added a nice chewy texture to the meal.


I made the Lentils and wheat berries first and cut up and cooked the other veggies and dressing later on.


This is another wonderful recipe from Oh She Glows by Angela Liddon.

Protein Power Goddess Bowl


Lemon-Tahini Goddess Dressing

Ingredients:




¼ cup Tahini


1 large clove garlic (I used 3)


½ cup fresh lemon juice (about 2 lemons - I used 2.5)


¼ cup nutritional yeast


2 to 3 Tbsp EVOO to taste


½ Tsp fine-grain sea salt, or to taste, plus more as needed (I used Himalayan)


Freshly ground black pepper


Instructions:

In a food processor, combine the tahini, garlic, lemon juice, nutritional yeast, EVOO, salt, black pepper to taste and process until smooth. Set aside until ready to use.



Lentil Mixture:

Ingredients:



1 cup uncooked green lentils or mix of green and black lentils


1 cup uncooked spelt berries or wheat berries, soaked overnight


1 ½ Tsp EVOO


1 small red onion, chopped


3 cloves garlic, minced


1 red bell pepper, chopped

1 large tomato, chopped


3 cups spinach or lacinato kale (I used kale), roughly chopped


½ cups fresh parsley leaves, minced


Instructions:

Cook lentils - 1 cup lentils with 3 cups water - simmer lentils uncovered and drain excess water after cooking for 20 to 25 minutes


Cook spelt berries (wheat berries) - 1 cup with 1 ½ cups water - for chewier spelt berries, reduce cooking times as needed cook 35 minutes or until water is absorbed (for me this was about 25 minutes)


Set aside once finished


In a large skillet, heat the EVOO over medium heat. Add the onion and garlic and sauté for a few minutes, until the onion is translucent.


Add the bell pepper and tomato and sauté for 7 to 8 minutes more, until most of the liquid has cooked off.


Stir in the spinach and sauté for a few minutes more, until the greens wilt.


Stir in the Lemon-Tahini Goddess Dressing and the cooked lentils and spelt berries. Reduce the heat to low and simmer for a few minutes more.


Remove the pan from the heat and stir in the minced parsley.


Season with salt and black pepper to taste.


TIPS: Gluten Free option - use brown rice or Quinoa instead of spelt berries.

Grain free option - omit the spelt berries
